La vitamina B2, o riboflavina, fa parte delle vitamine cosiddette idrosolubili, quelle che non possono essere accumulate nell’organismo, ma devono essere regolarmente assunte attraverso l’alimentazione. La vitamina B2 è presente nel latte e nei suoi derivati . In particolare nei formaggi , nelle uova, nel lievito di birra oltre che nel fegato e nei vegetali con le foglie verdi. Il fabbisogno giornaliero viene calcolato in base alle calorie introdotte, secondo un rapporto che vuole 0,6 mg ogni 1.000 Kcal.
Una sua carenza provoca nei bambini un arresto della crescita e in generale un rallentamento dei processi di assimilazione degli alimenti, specie di quelli lipidici. I sintomi della carenza di vitamina B2 sono uno stato generale di inappetenza, anemia, debolezza muscolare, tachicardia e anche problemi alla vista. Non esiste un eccesso di questa vitamina perchè l’eccesso lo smaltiamo immediatamente tramite urine.
